Smoked Garlic Herb Rack of Pork - Heating Instructions

Preparation: From a thawed state: Remove rack from plastic packaging. Preheat oven to 325 degrees. Place rack in a roasting pan. Heat for approximately 45 minutes. Check temperature with a meat thermometer (insert in thickest part of roast, not touching bone). Pull rack at 139 degrees. Let stand 5 minutes before carving.
Serving: To carve: Cutting right to left on the loin, place knife on the left side of the first rib. Slice downward through roast, following bone as a guide.
