Ready-to-Cook Garlic-Herb Rack of Pork - Preparation Instructions

Preparation: From a thawed state: Remove rack from plastic packaging.

Preheat oven to 325 degrees. Cover the exposed rib bones with foil. Place pork rack, fat side up. The rack does not need any additional seasonings.

After the rack has cooked for 45 minutes, pull the foil and continue cooking for an additional 45 minutes.

Check internal temperature with a meat thermometer. Pull the rack out of the oven at 148-150 degrees. Let the rack stand for at least 15 minutes uncovered (the roast will continue to cook and will rise another 5-10 degrees).
Serving: To slice the rack: Place knife on the left side of the 1st rib, slice downward through roast, following the bone as a guide.
