Ingredients: 3lb. Peeled Tenderloin Chateaubriand
Preparation: From a thawed state: Remove Chateaubriand from plastic packaging.

Preheat oven to 425 degrees. Place roast on shallow rack in roasting pan (do not add water). Insert meat thermometer into thickest part of roast. Press any seasonings evenly into surface of beef roast. Roast, uncovered, in oven approximately 50-60 minutes for medium rare (125-130 degrees) to medium (130-140 degrees)

Pull roast at preferred internal temperature. Cover loosely with foil and let roast stand for 10 to 20 minutes. The internal temperature will rise an additional 5 to 10 degrees during this time.
Serving: Slice the roast across the grain to desired thickness.
