Smoked Turkey and Mexican Mango Quesadilla
A Great Idea for Leftover Turkey!
1 lb. boneless Smoked Turkey, diced 3/8"
8 Flour Tortillas 12" diameter
8oz Grated Jalapeno Jack Cheese
8oz Grated Mild Cheddar Cheese
4oz Chopped Green Chiles
8oz Mango, diced 3/8"
Place flour tortillas on clean medium hot grill or fry pan.
Sprinkle with 2oz Jack Cheese, 2oz Cheddar Cheese, 4oz Turkey, 1oz Green Chiles and 2oz Mangoes. Lower heat, press a secon tortilla on top of the first.
Cook until tortilla browns, turn over and continue to cook until cheese melts. Remove from grill and cut into wedges.
Serve with guacamole, tomato salsa and sour cream.
