Grilling Tips for Steak
| Preparation: |
Use the "firmness to touch" method to gauge a steak's doneness.
Rare: Hold your hand in an open, relaxed state. Press the large thumb muscle between thumb and index finger, and it will feel like a rare steak.
Medium: Stretch out your hand. Press the same muscle and it will feel like steak cook to medium doneness.
Well-done: Clench a tight fist, and the thumb muscle will feel like a well-done steak.
Loin Steak (2-inch thickness):
Rare 4 minutes/side
Medium-Rare 5 1/2 - 6 minutes/side
Medium 8 minutes/sides
Tenderloin (3-inch thickness):
Rare 4 minutes/side
Medium-Rare 5 minutes/side
Medium 7 minutes/side
Porterhouse/T-Bone (1-inch thickness):
Rare 3 minutes/side
Medium-rare 4 1/2 minutes/side
Medium 6 minutes/side
Please note: Times will vary with the equipment used and the initial temperature of the meat.
